Hilario Arbelaitz to Receive the 2026 Terrae Award

This year, master chef Hilario Arbelaitz will be honored with the 2026 Terrae Award for his lifelong contribution to gastronomy, a distinction previously awarded to, among others, Colombian chef Leonor Espinosa for her work both in the kitchen and through her social foundation Funleo, and to Peruvian chef Gastón Acurio.
After more than half a century in the kitchen and the closure of Zuberoa in San Sebastián in December 2022, Arbelaitz has received well-deserved recognition for his outstanding contribution to Spanish cuisine. A self-taught chef, Hilario learned the secrets of cooking from his mother and aunt, successfully bringing Basque culinary tradition into the present with elegance and subtlety. Together with his brothers Eusebio and José Mari, he transformed the historic Oiartzun manor into a benchmark for both national and international diners, delighting guests with iconic dishes such as foie gras with chickpea and kale broth, Gillardeau oysters, and cheesecake.
Beyond his work as a chef, Hilario has mentored generations of cooks and played a key role in the Nueva Cocina Vasca movement, which helped elevate Spanish gastronomy on the international stage. His influence and legacy go beyond his own dishes: his work has inspired better cooking across Spain.
